Cinnamon Oat Pancakes

I’ve been trying to find healthy Breakfast Options, rather than just being predictable and having toast or cereal. These Cinnamon Oat Pancakes are one of my favourite Weekend Breakfast Treats. These pancakes do have a definite banana taste and the texture is a lot thicker than regular pancake batter ( you need the this as otherwise they’re a nightmare to turnover! ) but they’re lovely! Topped with Maple Syrup or Honey and Goji Berries, they are delicious. Enjoy!

( Makes around 6 small pancakes )

2 small bananas
2 cups of rolled oats
2 cups of almond milk
1 teaspoon of cinnamon (adjust to taste)

a handful of goji berries
honey/ maple syrup


Blend the bananas, cinnamon, oats and almond milk together to form a thick pancake mix batter,. In a hot pan with a little oil, cook the pancakes until golden on both sides. I find that smaller pancakes are definitely easier to turn over as they can be quite fragile if poured too thin.

Serve the pancakes with a drizzle of honey or maple syrup and a handful of goji berries.
