These Spinach & Feta Muffins are a delicious treat for Breakfast or Brunch and are super easy to make. Dave & I often go walking with our three dogs first thing in the morning so Breakfast is usually an after thought.These Muffins only take about 25 minutes to prepare and make so we don’t have to wait long to eat when we get back! Enjoy!
Makes 12 muffins
200 g frozen spinach, thawed ( I try to use Fresh when possible )
180 g feta cheese
250 g flour
3 teaspoons baking powder
1 teaspoon salt
2 eggs, beaten
80 ml olive oil
300 ml milk
Line your muffin tray with paper cups and cut the feta cheese into small chunks.( I used a silicone muffin tray and simply greased each individual cup with butter.
Preheat the oven to 180°C.
In a bowl mix flour, baking powder and salt. In another bowl combine spinach, eggs, olive oil and milk. Add in the flour mixture and be sure not to overmix. Fold in the feta cheese cubes.
Pour dough into the muffin tray and bake for about 20 minutes.
