Sorry for being a little bit quiet but I’ve got a good excuse. I just sold my Mum’s house for her ( yes, I will be charging her as it has been a lot of work!! lol ). She’s over in the Charente at the moment, about an hour from us but she wants to be nearer and have just put in an offer on a fab house just outside Cussac. It needs some work but luckily Dave is ready to take on the challenge!
ANYWAY ( I do get distracted! ), I just made this delicious Sundried Tomato Hummus. I’ve had real difficulty finding Tahini paste in this part of France so haven’t been able to make much of my own Hummus. So have finally found a way to make Hummus without Tahini. Wooohooo! Enjoy.
Serves 6 – 8
1 can chickpeas ( 400 g )drained and deskinned –
(this took some time but i promise it’s worth it!)
1/4 cup sun dried tomatoes in oil
2 Tbsp sun dried tomato oil
1/4 cup water
2 tsp roasted garlic
1/2 tsp salt
1/2 tsp pepper
1/4 tsp red chilli flakes ( optional)
In a high power blender/ food processor, combine all the ingredients and puree well. You may need to add a bit more water if it is not coming together and creamy.
Serve with crudites or crackers.
