Aquafaba Brownies

I’m always trying to find new ways to use aquafaba. I only heard about it a few months ago but I’m now a huge fan. I’ve made Meringues and a scrummy Chocolate Mousse  but then I heard about Brownies. yum! So had to try it. Enjoy!

Ingredients :

16 tbsp Aquafaba aka Chickpea Brine from out of a can of Chickpeas

1 tbsp Baking powder

200g Dark Chocolate

Flour –  you can go gluten free if you prefer . I just used Farine Fluide

2 tbsp Coconut Oil

Instructions :

Preheat your oven to 180°C.
Put the 16tbsp Aquafaba into your Electric mixer and attach the whisk. Whisk on high speed for about 2 minutes until it becomes white and foamy.

Then add in 1 tbsp baking powder. Whisk for another minute or so until soft peaks form.

Meanwhile melt your 200g chocolate in a Bain Marie on the hob. Once melted, add to the mixer and whisk until the chocolate is all mixed in, and the mixture is fluffy and almost mousse like.
Gently tip the mix into a bowl and add in your gluten free flour. Make sure it is mixed in well. Then add in 2 tbsp Coconut Oil.

Mix well with your Spatula. Then tip the mixture into a baking tin which is greased with oil and has parchment paper on the base.

Put in the oven for 30 minutes. Then leave to cool for about 45 minutes. And enjoy!
